Lazagna

What you need:

Wheat-free lazagna sheets
Red sauce
Mince
Milk
Egg

  1. Place line of sheets in dish
  2. Cook mince in frying pan
  3. Place a line of mince in dish on top of sheets
  4. Pour red sauce in dish
  5. Mix the egg and 1/2 cup of milk together and place in dish
  6. Sprinkle paremesan cheese and salt
  7. Repeat until dish is full
  8. Cook until golden

Boscailola sauce
Pot of oil –  2 teapoons Chopped onions Chopped parsley Choppen bacon or ham Mushrooms sliced Butter sauce Cream Pinch of salt and pepper Combine and cook for 20min and stir Peas

  1. Put in boiling water
  2. Add oil, salt, onion
  3. Add sauce and mix
  4. Cook in saucepan

Mum’s biscuits
What you will need: 2 cups of sugar 2 spoons of essence 2 eggs As much flour as needed 1 cup of oil or butter

  1. Mix all ingredients
  2. Put into shapes
  3. Place in oven for 10min
  4. Turn off and leave for 20mins in oven

Lemon biscuits

What you will need: 2 cups of sugar 1 cup of milk 2 spoons of essence 4 eggs As much flour as needed 1 cup of oil or butter Lemon essence – half bottle Pinch of cinnamon

  1. Mix all ingredients
  2. Put into shapes
  3. Place in oven for 10min
  4. Turn off and leave for 20mins in oven

For orange biscuits

Add 1 cup of orange juice and almond essence and a kilo of self raising flour

Banana cake

  1. an egg, a cup of sugar, 1/2 cup hot water, 1/2 oil, 1 teaspoon of bicarb soda, 1 teaspoon of cinammon and a cup of milk, squashed banana and self raising flour
  2. Add a tablespoon vanilla essence or lemon
  3. Cook for 45min on 150 degrees
  4. Leave in oven for 10min to cool
  5. Add nuts or sultanas on top

Mum’s cake

1 cup of sugar 1/2 cup of milk 1/2 cup olive oil 3 eggs 1/2 teaspoon lemon or cinnamon essence 2-3 cups of self raising flour

  1. Mix all ingredients
  2. Grease dish with butter and then flour
  3. Put mix into dish
  4. Bake in oven for 45min on 150 degrees

Icing Cup of icing sugar, add a drop of colouring if you want to make it coloured Cookies 250g melted margarine 3/4 cup of self raising flour 300ml cream 3 tablespoons of sugar

  1. Pour cream and margarine while mixing together with flour
  2. 2 teaspoons of vanilla essence and mix with some more flour if needed.
  3. Cut into shapes
  4. Cook for 15min on approx 150 degrees

Eggplant – roasted/grilled

  1. Slice eggplant with skin on
  2. Put in grill and roast until darkened
  3. Put oil, vinegar, oregano and serve

Zeppolle/Sphinge

  1. Flour and water
  2. Mix until elasticy
  3. 1 teaspoon salt
  4. Pot half filled with oil
  5. Drop mix in dollops until they balloon out and dip in sugar

Lentil/Vegetable soup

  1. 1 cup of lentils (250g) in tupperware or saucepan of cold water
  2. Let it sit for 1 hr
  3. Wash lentils by hand to get rid of dirt etc
  4. Chop 1/2 onion, a carrot and celery up into pieces
  5. Boil in saucepan for 1hr
  6. Blend for 5min until it becomes soup

Mushrooms

  1. Wash mushrooms
  2. Chop or slice mushrooms
  3. Put oil and chopped onion in frying pan
  4. Fry for 5-10min

Salted dried olives

  1. Buy a case of black olives
  2. Put in a bucket with a handful of salt and some water
  3. Leave for a week, toss the olives each day
  4. Put all the olives in little bags, leave the water in the bucket and freeze until needed
  5. Once removed from freezer, mix with olive oil or garlic or oregano and serve

Jam

  1. Blend figs etc
  2. Put as much sugar as there are figs and mix for 1/2hr until it is creamy
  3. Put in a jar and refridgerate

Fish fillets – freshwater

  1. Cook the same way you do for chilli praws, in pan
  2. Rinse each fillet
  3. In an oiled pan, add chilli flakes, garlic and fillets
  4. Fry for 10min on each side

Mussels

  1. Rinse mussels
  2. Add to each – breadcrumbs, salt and garlic
  3. Roast in oven

Spaghetti Bolognese

  1. Fry mince in pan with oil until brown
  2. Pour sauce into pan and stir
  3. Boil spaghetti in saucepan and mix sauce and spaghetti together

Rice-flour pizza 1 boiled potato 1 egg Rice flour 1 teaspoon salt

  1. Mix to form base
  2. Add tomato paste to base
  3. Add toppings and put in over for 20min approx
  4. Alternative –  use lebanese bread as a base

Cornflake Honey Slice

1.5 cups cornflakes 1 and a third cups of rolled oats 1 and a third cups of coconut 3/4 cup of castor sugar 125g butter 2 tablespoons honey

  1. Lightly grease pan
  2. Combine cornflakes, oats, coconut and sugar into bowl
  3. Melt butter in pot and add honey and stir
  4. Spread into pan
  5. Bake for 20min on 175 degrees
  6. Stand for 15min to cool

Baklava

Leave for 3 days in water and then rinse
Combine to make sauce: Basil Peeled tomotos – can
Oregano 1 onion

  1. Add baklava pieces to the frying pan and combine with sauce
  2. Fry for 20min

Marinated eggplants – southern italian style

  1. Take 3 egg plants, slice into long one inch wide pieces
  2. Pour vinegar and slices into a bowl
  3. Add lots of salt and oil
  4. Put a heavy wait on top of bowl so it squeezes them
  5. Leave for 3days
  6. Take a bunch out and squeeze out the water
  7. Pour chilli flakes, garlic and slices into a bowl and mix
  8. Squash into jar tightly and pour oil until they are all covered

Chicken

  1. Add chicken drumsticks to frying pan of oil
  2. Add onion, garlic and a teaspoon of salt
  3. Add basil and cook for 45min
  4. You can also add some red sauce
